Culatello di Zibello Factory Visit – Gourmet Lunch and Winery Visit with tasting
Visit the place famouse for its culatello di Zibello, a slowly cured boneless ham made from the choicest muscel of the pig’s rump, as Anthony Bourdan did when he was in Italy.
The unique cellars where the Marquesses Pallavicino cured their pork are full of culatelli once again, the old cheese maturing room has resumed its old function, the ice house and the prison have emerged from the mud and the frescoes have been restored to their former splendour, the hearths burn poplar logs.
Itinerary for the visit: the kitchen garden, the Corte, the frescoed rooms, the old cellars for aging the culatelli and the Parmigiano-Reggiano.
Following with a Aperitivo, with Salame strolghino of culatello, Salame gentile Pallavicino, lard, Parmigiano Reggiano of Pianura and Wine Tamburen

The Tour continues to one Family Winery.
This visit consist of an explanation of the history of localita’ Santa Croce (founded by the Romans), an explanation of the history of our 16th
century chateau which is built on the foundation of the Roman castrum, and, obviously a tour of the winery and our “sort of” mini-museum of old wine making equipment.
This is followed by the actual wine tasting in our cantina, part of which is the original kitchen dating from 1550. Generally, we try to make the tastings “three dimensional.” That is, we try to get our guests to “actively participate” by soliciting their input through the use of different glasses, matching wines with different foods, to underscore certain taste dynamics, etc.
