Starting with an introduction to Italian cuisine with the first tasting ‘Beppe and his cheeses’, a unique cheese bistrot in Rome, born from the idea of Beppe Gioviale, artisanal cheesemaker from Piedmont region, who wanted to share his 80-plus Italian cheeses. You will be greeted with a selection of the finest cheeses, paired with a variety of D.O.C.G wines.

You will visit the Jewish Ghetto and the ruins of Portico D’Ottavia, while discussing the Jewish influence in the Roman cuisine.

After this, we will cross the Tiberina Island leading us to the hidden side of Trastevere; away from the crowd, where there is an ancient cookie factory. The atmosphere and the warmth of the owners, together with the sweet smell and taste of the cookies, will take you back in time.

After this we will go to a Norcineria, which is a place selling products from Norcia, a city famous for curing meats. There we will indulge in some typical meats like porchetta, paired with a glass of a Roman craft beer. All while, meeting the family running the shop and learning how to shop like a local Roman.

After the norcineria, be ready  for a mistic experience all about eggs. In a restaurant entirely devoted to the eggs, run by famous chef Barbara Agosti,  we play  “Il gioco dell’ova”, literally “the egg’s game”: a 6 egg sampler going from quail eggs, to oysters right up to caviar. And as it’s considered the best in town, we will sample carbonara here! The wine list of Eggs also provides a selection of organic and natural wines, from which you can choose a glass.

Ending the tour in a gelateria. For many people this is the best gelato in the city, because it is one of the few gelato’s made with locally sourced ingredients, rigorously in season flavors while persevering the raw qualities of each ingredient, thus creating an outstanding gelato that you will not forget.
