MAIN INFORMATION:
– Full-day tour (approximately 10 hours) starting at 7:00 am
Important: please note that the duration of the tour may vary depending on the itinerary, the season, traffic conditions, and the number of people in the group!!!
Please arrive at the meeting point at least 5 minutes before the scheduled meeting time in order to avoid missing the bus/coach and a fantastic #DOP day. The bus departs at 7:05 a.m. and will not wait in case of delay.

What’s missing? The perfect Italian family-style lunch, made up of multiple courses and served at our private restaurant “Ottimo&Abbondante”, is the icing on the cake: traditional dishes, local wines, the big heart of our chef, atmosphere, good company, and much more… but you’ll have to see it in person!
We will start this incredible journey with an early pick-up (around 7:00 a.m.) in Bologna using our private minivan or minibus, heading toward the countryside between Modena and Bologna.
Why so early? Parmigiano Reggiano doesn’t wait! It is produced only early in the morning, and we want you to experience it from the very beginning.
You will watch the cheesemakers carry out every phase of production right in front of your eyes. You will be able to touch the creamy curd, taste the freshly cooked cheese, and be absolutely amazed by the warehouse, where thousands of wheels all around you wait at least 12 months to be “baptized” as Parmigiano Reggiano.
And now it’s time to taste it — what did you expect?
Young or aged, creamy or crumbly, delicate or intense: you can decide which of the two different aging samples is your favorite… or simply love them both!
Another jewel of Emilia-Romagna is waiting to be discovered: Traditional Balsamic Vinegar of Modena.
After our “Breakfast of the champions” with local salame, mortadella, homemade bread, focaccia, frittata cake, Lambrusco wine, and coffee, we will guide you into a magical world of aromas, flavors, patience, and family tradition that you have never experienced before.
In the aging room, surrounded by many silent barrels, the secrets of this complex, unique, and fascinating product will be revealed.

The products of Prosciuttificio Montevecchio will win over your palate with their fragrant aroma, buttery texture, and delicate saltiness.
We will learn about the strict regulations, the long aging process, and the great care required to transform just two ingredients into a typical known product with unique characteristics.
We will taste its wholesomeness and authenticity together with other local cured meats and glasses of wine, before a lunch worthy of the name!
Learning time is over — now it’s time to fill our stomachs.
The educational experience turns into a feast for the eyes and the palate: seasonal appetizers followed by at least three delicious homemade traditional pasta dishes and a dessert, all accompanied by a wide selection of local wines. The rest will come naturally: fun, fun, fun.
